Yogurt start as fresh milk whey. Utilizing fresh milk, it is first pasteurized, then fermented with live bacteria cultures, and incubated at a specific temperature to allow bacteria growth. The culture ferments the natural sugar lactose found in milk, which gives yogurt its distinctive flavor.
